
Saffron Jalebi

INGREDIENTS
Batter
- ⅞ Cup All Purpose Flour
- 2 Tablespoons Corn Starch
- 10 Benefit Spice Saffron Strands
- ½ Cup Water
- 1 Tablespoon Plain Yogurt (Full Fat)
- ¼ Teaspoon Baking Soda
- Vegetable Oil for Frying
Syrup
- 15 Strands Benefit Spice Saffron
- 1 Cup Water
- 2 Cups Sugar
- ⅛ to ¼ Teaspoon Cardamom, Ground
- 1 Teaspoon Lemon Juice
DIRECTION
- Heat 2 Inches of Oil in Heavy Pan to 325*F
- Steep Both Saffron Amounts in Water, Separately
- Whisk Flour, Corn Starch, ½ Cup Steeped Saffron Water and Yogurt Until Smooth, 3-5 Minutes
- Add Baking Soda and Whisk 2 More Minutes
- In Saucepan over High Heat, Bring Steeped Saffron Water, Sugar and Cardamom to Boil
- Reduce Heat and Simmer until Syrup Reaches 225*F, Turn off Heat, Leave on Burner
- Using Piping Bag with Small Tip, Pipe Batter into Oil Making Circular Shapes as Shown, Fry Until Crisp, Flipping Over Halfway (2-5 Minutes Total)
- Remove Jalebi from Oil and Submerge in Syrup
- After 30 Seconds, Remove from Syrup and Cool on Baking Rack. Serve Warm or Cool, and Enjoy!
