Saffron Jalebi

INGREDIENTS

Batter 

  • ⅞ Cup All Purpose Flour 
  • 2 Tablespoons Corn Starch
  • 10 Benefit Spice Saffron Strands
  • ½ Cup Water
  • 1 Tablespoon Plain Yogurt (Full Fat)
  • ¼ Teaspoon Baking Soda
  • Vegetable Oil for Frying 

Syrup 

  • 15 Strands Benefit Spice Saffron
  • 1 Cup Water
  • 2 Cups Sugar
  • ⅛ to ¼ Teaspoon Cardamom, Ground
  • 1 Teaspoon Lemon Juice 

 

DIRECTION

  1. Heat 2 Inches of Oil in Heavy Pan to 325*F
  2. Steep Both Saffron Amounts in Water, Separately
  3. Whisk Flour, Corn Starch, ½ Cup Steeped Saffron Water and Yogurt Until Smooth, 3-5 Minutes
  4. Add Baking Soda and Whisk 2 More Minutes
  5. In Saucepan over High Heat, Bring Steeped Saffron Water, Sugar and Cardamom to Boil
  6. Reduce Heat and Simmer until Syrup Reaches 225*F, Turn off Heat, Leave on Burner
  7. Using Piping Bag with Small Tip, Pipe Batter into Oil Making Circular Shapes as Shown, Fry Until Crisp, Flipping Over Halfway (2-5 Minutes Total)
  8. Remove Jalebi from Oil and Submerge in Syrup
  9. After 30 Seconds, Remove from Syrup and Cool on Baking Rack.  Serve Warm or Cool, and Enjoy!
